Gluten Free Menu Swap Monday

Hello everyone!

This is our first week participating in the Gluten Free Menu Swap, and I’m looking forward to continuing it. This week the host is Ginger Lemon Girl, and she chose the ingredient for the week: rosemary. Here is what I’m planning for this week. It’s worth noting that since I live by myself, I’m a pretty lazy chef. I used to make some phenomenal gluteny things, but now I feel like I’m re-learning cooking all over. Hopefully as time goes on this will become a more intricate listing. Regardless, here you go!

Monday

A chilly weekend in DC makes me want to try my first attempt at making chili! Expect a recipe posting if it’s a success!

Tuesday

GF Mac n Cheese and some sort of spinach on the side.

Wednesday

Dinner on the run: Amy’s Black Bean Enchilada with Spanish Rice and Beans (list of Amy’s GF products)

Thursday

Some kind of chicken and roasted red potatoes with rosemary

Friday

Possibly taking Brandi’s suggestion and checking out Zaytinya! I heard they extended their restaurant week menu until the 28th!

    I am posting a fabulous recipe I rediscovered last week. Its for roasted chicken slathered in herbs, one of which is rosemary. Hopefully, it will inspire all Gluten Free Menu Swap participants to try it!
